Now, Where To Put It all?

As you might be able to imagine, it is becoming increasingly hard to find room in our kitchen to put all the lovely cans of food I have been making. We live in a 100 year old farm house so there is not tons of cupboard space. People just did not have so much stuff back then. Make you think a little…

But still we needed more kitchen storage, and quick. I had clipped a photo from a magazine last winter of a shelf I thought would look great in here but nothing ever happened with it and I had sort of forgotten about it. But last week Jason dug out the photos as well as some boards from the barn.

By the next week we had a beautiful new shelf and two days later it was full of mason jars. It looks like it has always been there. Best of all I can see everything its not hidden in the back of some dark cupboard.

Tomatoes, Tomatoes and More Tomatoes

The past few weeks have been some of the most abundant in the garden yet! Thus we are overwhelmed with more produce than we know what to do with. There are Potatoes, Carrots, Beets, Kale, Lettuce, Swiss Chard,Herbs… And tomatoes. More tomatoes than we know what to do with.

It has been a personal mission of mine not to let any of these go to waste. I love tomatoes and take personal offense to seeing them go bad. I have been researching recipes and making them up as well. some with more success than others but it is all part of the learning process I guess.

So far I have made…
18 Jars of Chunky Salsa
10 Jars of tomato sauce
11 Jars of Spicy Chipotle Salsa
9 Tiny Jars of Hot sauce
9 Baggies of Oven Dried Tomatoes… with another two trays in the oven right now
8 Mini Jars of Oven Dried Tomato Pesto

…And there are still more tomatoes sitting on my counter!?! I am actually running out of things to make with tomatoes. I still have a few ideas, like BBQ sauce?
